Step 2. Place the apple on a cutting board and make four cuts so that you are left with a square core

Eco-Friendly Memorial Day Picnic

Happy Memorial Day

It's a day to remember and a day to appreciate Earth and our families

Memorial day is the turning point in the season when you realize that summer is finally here.  It’s a time of year when families gather for backyard barbeques and fun water sports of all kinds.  While your making memories with family and friends, here are a few ways to do it with eco-friendly style!

Use a solar powered or gas grill instead of charcoal!

Recycle or compost all of the materials that use for your meal.

If your spending the day at the beach, have the kids do a fun beach clean up!  You’ll be surprised at the level of participation.

Aim for bio-degradable dishes for your picnic

Kick summer off right and stay tuned for safe summer practices!

Broccoli Bites!

Monday, May 23rd, 2011

We eat a lot of fruits and veggies at our house, sometimes that means we need to change up the way we prepare our produce as a way keep things interesting!  My husband is the more adventurous cook in the house so he’s always on the lookout for creative recipes!  A friend of ours suggest breaded broccoli so we decided to give it a try.  It was SO good!!!!

Broccoli Bites

Our daughter did most of the prep work and had a blast dipping and rolling the little broccoli trees!

Broccoli Bites 2

We didn’t have a precise recipe to follow so this is what we came up with:

1.5 pounds of broccoli – trimmed into the crowns
1 cup breadcrumbs
salt and pepper to taste
2 egg whites
2tbsp milk
1tsp dried basil
1tsp dried oregano

1.       preheat the oven to 375 degrees Fahrenheit
2.       trim the broccoli into the crowns
3.       put the egg whites and milk into a container and whip till mixed well
4.       put the bread crumbs, salt and pepper, basil and oregano into another bowl or a large Ziploc baggie.
5.       dip the broccoli crowns into the egg and milk mixture
6.       place the dipped crowns into the bread crumb mixture and coat the crowns with the mixture
7.       place the breaded crowns onto a cookie sheet – make sure that they are flat on the sheet to ensure that the breadcrumbs get crispy!
8.       place into the preheated oven for 20 minutes

Converting to Organic Food

Wednesday, May 18th, 2011

If your considering converting to the organic food movement, here are a few things to keep in mind when you hit the grocery store.  Always look for the USDA Certified stamp, sticker, or symbol.  Keep in mind that meats will have this too.  The meat section of the supermarket often has chicken and cow meat that is hormone free and the animal is fed only pesticide free food to sustain life.  I would also suggest converting a little at a time, instead of all at once so that it wont be such a shock to your lifestyle.  The kiddies have to get used to it!  Make it fun for them too.  Make colorful veggies into caterpillars or artwork, you can find many recipes here on Green Halloween!

I love Life, I love Organic

Buying organic foods from your local farmer's market is a safe bet!

Beautiful Purple Kale

Monday, May 16th, 2011

When we think about eating a rainbow of fruits and vegetables it’s fairly easy to get in your green, red, orange and yellow…but the blue/purple color group can be trickier to work into your diet every day!  I am always on the lookout for purple produce. Purple happens to be my daughter’s favorite color so when we go grocery shopping she is always the first to spot anything purple!  We were both excited when we came across some purple kale!!  We’ve been enjoying our green kale that we turn into chips…yum!  It’s a healthy and easy snack to make!

Purple Kale

This is what we plan to do with our lovely purple kale!  If you’ve never made kale chips before here is a great video by my friend Dani Spies
