Cauliflower Easter Bunny!

We like to find ways to incorporate fruits or veggies into all our holiday celebrations!  There tends to be quite a lot of candy and sweets during holidays so we like to add extra produce in ways that compliment the festivities.  At Easter my daughter and I like to make this cauliflower bunny as part of our centerpiece…add a little dip and it’s gone by the end of the evening!

We just cut up a head of cauliflower (we buy two and cut up both and serve the extra in a veggie tray), use extra long tooth picks and stick on end into a small 3 or 4 inch Styrofoam ball, then you add the rest of the features with whatever produce you like and have on hand!  When you’re guests are ready to dig in, they just pull out a piece of cauliflower and use the tooth pick to hold on as they dunk the cauliflower into their favorite dip. It’s cute, fun and healthy…you can’t go wrong with that combination!

A Sweet & Healthy Treat!

We are very excited to introduce you to our newest weekly guest blogger, Kia Robertson!  Kia is a mom and the creator of the Today I Ate A Rainbow kit.  She is passionate about creating tools for parents & educators that make it easier to set healthy eating habits!

Every Monday Kia will be sharing ideas on simple and fun ways to get your family eating healthy!

 

My friend Deb recently shared a recipe for a cookie/chewy bar that really appealed to me because it’s healthy and VERY easy to make.  What a great combination!  This is also the perfect recipe to make with your kids, in fact my daughter only needed my help with the oven!

What you’ll need:

4 mashed bananas
2 cups of oats
1/2 cup of raisins
Cinnamon  A dash will do unless you’re like my daughter who feels the more the better!

Directions:

1. Peel and mash bananas
2. Stir in oats
3. Add raisins and sprinkle with cinnamon
4. Roll into balls or fun shapes and spread on baking sheet
5. Bake at 350 for approximately 15 mins

Once they cool get ready to enjoy these tasty treats!!
