Peanut Butter Please!

Everyone loves the combination of peanut butter and chocolate. It’s a match made in heaven, and these Peanut Butter Pumpkins are bound to take you there. They are perfect little munchies for a party, or to throw in a lunchbox throughout the week.

Peanut Butter Pumpkins

    • 1/2 cup peanut butter
    • 1 tbsp honey or agave nectar
    • 1/2 cup rolled oats
    • 1 tbsp ground flax
    • peanut butter chips, for melting
    • a couple squares of your favorite chocolate

Melt the peanut butter and honey together in a small microwavable bowl until easily stirred. Mix until well blended.  In another bowl, combine oats and flax.  Pour the peanut butter mixture into the oat mixture and mix together. It may seem dry at first, but just keep mixing.  Pat the mixture into little balls. Chill in freezer overnight.

The next day, melt peanut butter chips in a small bowl.  If needed, thin the mixture with a bit of milk. Using a toothpick, fork, or your hands, dip the frozen peanut butter balls into the melted peanut butter chip and twist a bit to coat.  Set back on plate.  Put the balls back in the freezer for about an hour to let the peanut butter coating harden.

Once hardened, cut chocolate pieces into rectangular chunks and place on top of balls to make pumpkins.  You may have to melt the bottom of the chocolate a bit to get it to stick on top.  Return balls to freezer until serving time.

Feel free to melt a little chocolate and draw a smile on with a toothpick. These little guys should be happy that they are so healthy and tasty.

Make sure to use organic, fair trade, and GMO-free products.

Playing with Food

Ever since my daughter was little I’ve encouraged her to have fun with and play with her food. We’re not talking food flying around the kitchen playing but the kind where faces are made out of orange slices or veggies are cut into fun shapes.  I think it’s important to let kids relate to food in a fun and enjoyable way, especially when it comes to fruits and veggies who have a lot of tough competition with all the “fun” processed food that is geared towards kids.

Persimmons – A New Fruit Adventure

We were really curious to try this orange fruit that looks like a cross between a tomato and an apple!

We each had a slice…it was pretty good!  The inside was soft and the skin is kind of tough…almost a bit crunchy!  I didn’t find that it had a lot of flavor but it was still enjoyable.

I’m sure there are plenty of recipes using this fruit…but the easiest way is just to cut it up and eat it!  You could add persimmon slices to salads or puree them to make smoothies,  a topping for pancakes, or use it as a flavoring for plain yogurt.

They are in season from October through December so if you find some at your local grocer or market give one a try! Going on a fruit and veggie adventure, trying something new makes it fun for kids!

A Healthy Holiday Treat!

With the holiday season fast approaching we know that there will be plenty of sweet treats and homemade baking around! That means it’s the perfect time to try to balance all those goodies out with some delicious and fun healthy treats!  These lovable little ladybugs make a great treat and they’re pretty darn cute :)

Ladybugs

What you need: Adapted from Batter Up Kids: Delicious Desserts Makes 12 ladybugs

12 seedless Green or Red Grapes

12 (6- to 8-inch) wooden skewers or  toothpicks

12 whole strawberries

24 mini chocolate chips or dried black currents

 

Directions:

Step 1.  Wash your grapes and strawberries

Step 2.  Cut the ends off of the strawberries and cut the grapes in half

Step 3.  Slice off the bottom of the strawberries (this will help them to sit flat on the plate)

Step 4.  Place a grape on a toothpick or wooden skewer, sliding it all the way to the end

Step 5.  Next place the strawberry on the skewer, cut end first, and slide it down to touch the grape

Step 6.  Gently score the top of the strawberry to create the appearance of wings

Step 7.  Finally, carefully push the pointed ends of the chocolate chips (or dried currants) into the strawberry to make the ladybug’s spots.

Tropical Treasure Smoothie

Making a smoothie with your kids is fun and a great way to get fruits and veggies into their diet!  One of our favorites is a tropical smoothie that gets its fabulous green from the baby spinach we put in it!  This smoothie is quick and easy with one cup of every ingredient!  We made this smoothie in our latest In The Rainbow Kitchen video In the Rainbow Kitchen

Tropical Treasure Smoothies

 

Making smoothies with your kids is a great way to have a little fun together and get some fantastic fruits and veggies into their diet!  You can change it up by combining different fruits and veggies and using various liquids as a base.

We generally use a one cup rule…one cup of everything!!!

Ingredients:

  • 1 cup Pinapple
  • 1 cup Mango (Ataulfo is our favorite type)
  • 1 cup Cantaulope
  • 1 cup Baby Spinach (or just start out with a couple of leaves)
  • 1 cup Coconut Water (add more based on desired texture)
  • 1 cup Ice

 

Directions:

  1. Wash all your produce thoroughly.
  2. Cut up your fruits and veggies.
  3. Place them all in the blender.
  4. Add coconut water and ice.
  5. Blend until smooth.
  6. Enjoy!!!!!

You can also make delicious popsicles out of your smoothie mix…they are a perfect healthy snack on a hot summer day!
